So we're sitting at home trying to decide what to have for dinner. We had a pretty random assortment of half-full jars in the fridge and didn't want to go grocery shopping. Andrew decides to grab some pork chops that we'd planning to use this week and just make something up. Here's what our dinner turned out to be:
Breaded pork chops with sun-dried tomatoes and crumbled Feta cheese on top; served over a bed of fresh mushrooms and baby spinach, with blue cheese mashed potatoes and steamed broccoli on the side.
It was awesome. I just finished a few left-overs that I brough into the office for lunch. Still incredibly tasty.
I think this means I'm in charge of cooking tonight.
